Sorbitol is a white, odorless, crystalline or powdery substance that is widely used in various industries. Its chemical formula is C₆H₁₄O₆, and it belongs to the polyols or sugar alcohol family. It is a reduced form of glucose, where the aldehyde group has been replaced by a hydroxyl group.
Physically, sorbitol is highly soluble in water and has a sweet taste, though less sweet than sucrose. It has a melting point range of 88-102°C, depending on the conditions of crystallization. Sorbitol is also soluble in alcohols and some other solvents.
